Paneer is the most common Persian and South Asian cheese. It is an unaged, acid-set, non-melting farmer cheese made by curdling heated milk with lemon juice or other food acid.Most varieties of paneer are simply pressed into a cube and then sliced or chopped, although the eastern Indian variety is beaten or kneaded like mozzarella, and crumbles more easily than the North Indian variant of paneer. - Owner and Cheese aficionado Dana A. Romero is opening La Fromagerie d' Acadiana in the Fall of 2009, with a vision of creating Acadiana's finest Cheese shop.
"What I find lacking in the Acadiana area, known world wide for it's fine cuisine, is any type of fine cheese shop like those located in other areas rich in culinary flavor like Paris, New York and London."
La Fromagerie d' Acadiana intends to provide Acadiana with a one stop shop for specialty artisanal cheeses and the accompanists like crackers, honeys et al.
The store will consist of an upscale international cheese shop and delicatessen with a distinct menu that includes authentic, hard to find ingredients from around the country and the world. The facility will include eating area, deli/kitchen with counter/check out area and grocery/gift area.
The mission of La Fromagerie d' Acadiana is to provide residents and visitors with a combination of quality, authentic, hard to find, cheese items and prepared foods, with good service and a pleasant atmosphere with the warm feel of an old-World outdoor market.
The deli will serve sandwiches, salads and specialty drinks. Gift items will complement the international theme of the store and include a limited selection of kitchen wares and cookbooks. All the recipes used in the deli will highlight items sold in the market.

The Inspiration
So I am shopping for cheese at Lafayette, La's Fresh Market. Low and behold I catch sight of the Sept issue of Wine Spectator and right on the cover is "100 Great Cheeses". I read thru the articles on cheese and begin to search for the cheeses in the markets cheese case. The Beginning
Every story, every adventure, every day has to have a beginning. La Fromagerie d' Acadiana began with me having a crazy idea for a new cheese shop for the people of Acadiana.. Where they could come to sample, enjoy and buy the multitude of choices the fromage world can offer. Those choices that are not currently available at all, anywhere near here.
